What better way to celebrate Valentine’s or Galentine’s Day than with this beautiful Dragon Fruit Rose Mimosa 💕
I garnished my glasses by brushing the sides with agave then rolling in a mixture of dried rose petals and edible gold sugar. The ice cubes are made with Dragon Fruit juice and of course I had to top it off with Veuve Du Vernay Ice @Veuveduvernay a deliciously affordable semi-sweet sparkling wine created especially to be served over ice.

Ingredients
One 3-4-pound chuck roast
3 tablespoons olive oil
1-2 tablespoons kosher salt
1 tablespoon coarse black pepper
3-4 russet potatoes cut into 2-inch chunks
12-15 baby carrots
2-3 diced garlic cloves
2 cups beef broth
4-6 thyme sprigs
Directions
Preheat oven to 300°F. Rub the roast with olive oil and sprinkle evenly with kosher salt and pepper. Sear the roast in a large Dutch oven or in a Hero Pan (like I did) over medium-high heat, sear until brown on all sides. Add the potatoes, carrots, garlic, thyme and beef broth to the pot. Cover and place in the oven. Roast until the meat falls apart and the vegetables are fork tender, about 4 hours.
Serve the pot roast with the vegetables over rice or mashed potatoes.
